It seems that Hesiod left 3 works intact. Can anyone tell me what they were called in the language used at the time? I understand the idea of titling their work may not coincide with how we use it, but I guess what I am asking, is Hesiod's work ever mentioned outside of his own Writings?

It is common for the ancients to refer to a work just by mentioning the author, in phrases such as "Plato says", "Homer says", etc, without precise reference to work (of course not to verse or chapter, etc).
